The beautiful Arabica in this coffee comes from our partner farmer producer organisation in the Biligirirangan Hills. The coffee grown by this FPO has always been organic and the FPO has even committed to cultivating coffee under the shade of indigenous forest trees. The Robusta comes from a most unique group - the Fair Trade Alliance of Kerala. This FPO is a powerhouse! Enough said!

Name Inspiration

Ficus or fig trees are a keystone species. Fruits of Ficus trees are consumed across the animal kingdom – especially birds. Hornbills, barbets, pigeons and bulbuls may entirely subsist on figs when these are plenty. Ficus trees have also profoundly influenced cultures across several religious traditions – Christianity, Islam, Hinduism and Buddhism.

On coffee farms, Ficus trees are a centre point for our conservation efforts. We monitor their abundance, diversity, shade canopy and the wildlife species that depend on them.

A traditional coffee processing method done right is what this lot stands for. Roasting a lot like this also requires careful disbursement of heat with low drum temperatures to preserve its inner sweetness. We roasted this coffee at a fairly lower drum speed with lower initial heat that gradually rises and reduces before the first crack to end the roast at a light level. Produces a med-heavy bodied, fruity and rich cup of coffee with a lingering aftertaste. This region, BRT as it is fondly known is a magnificent forest with elevational gradients that go from 800 to 1600m! This unique range in altitude enables all major forest types and this in turn produces a magical cup of coffee!

Name Inspiration

The Jumping Ant (Harpegnathos saltator) is a species rather more egalitarian in nature. Unlike other ants, their colonies consist of only a small number of individuals where there are only a few differences in body size and behaviour between the queen and other ants. In Jumping Ant colonies, some worker ants can mate and lay eggs just like the queen. Jumping Ants are active predators, hunting in the early hours of the morning. As their name suggests, they leap - often as far as 10 cm distances! They leap mostly to catch their prey - flying insects! We love the jumping ant and Biligirirangan Hills is the where we observed this creature for the very first time - a tiny nest underneath the staircase of the field station.

Well-suited to environments with limited water access and hot climates, this process typically uses no water and requires no specialized equipment.\n\nAfter harvesting, coffee cherries are dried until they reach about 20% moisture content. They're then usually rested for a few weeks in bags before being sent to a mill for hulling and export preparation.\n\nThe cherries can be dried on large patios or raised African beds—large trays with a mesh base that allow increased airflow for even drying. Best practices include keeping the drying coffee in shade during the hottest parts of the day and avoiding re-wetting by rain or condensation. This coffee is one the most unique single origin coffees's we have come across. A lot that everyone must try to understand terror and complexity Indian specialty coffee can deliver. It was a challenge at first to understand the nature, origin and process of this LOT, but as we sample roasted and cupped first few batches we knew where we were headed. Clean floral aromatics, jasmine in your final cup & bright acidity makes this a very enjoyable cup of coffee. \n**Brewing Note:** Due to its delicate roast level, we recommend brewing this coffee with higher water temperatures (97°C) and a controlled pour to ensure full extraction. We had the pleasure of being hosted by Ashok on the farm and in his home and it was one of those truly memorable experiences. Ashok has scoured all the current processing research and adopted a scientific approach to processing. Recognising that Indian plant stock is not the best material in the world and that the land has been aggressively farmed over generations he has used science to create incredible flavour profiles.\n\nEntering the Ratnagiri QC lab was like walking into Willy Wonkers dream world. All the glass walls were adorned with detailed notes of a huge number of processed coffees from their previous visitors from Korea. Looking through the glass down to the array of stainless steel vessles and pipes, it looked more like a science lab than a coffee cupping space.\n\nAshok has invested heavily in equipment and expertise to enable controlled processing including an ozone washing station, temperature and pH controlled bioreactors, fermentors and a controlled dehumidification dark room. In addition they have a full time micro biologist measuring popluations of microbes and creating their own cultures for fermentation.\n\nIt was all very impressive and the most advanced processing we've seen anywhere. We cupped 52 coffees over the course of 3 sessions and a few stood out including this 'Dark Room 5' Natural. The 52 coffees were about half of the experimental processes and variety selections that Ratnagiri were working on, with the objective of making a selection of 10-12 that will become the Ratnagiri recipes. I have a strong feeling Dark Room 5 will make that final cut.\n\nAshok sent through the process details for this coffee and the detail is as complex as the flavours in the cup: \"This is a 72-hour extended terroir yeast and lactic fermented natural processed coffee. It is from the SLN 9 varietal grown on our farm at 4425 feet from the block called GODOWN Patte. The Brix of the coffee cherries was 25.8 when harvested and they were put into Bio fermenters after floater removal. A particular strain of Saccharomyces yeast from our terroir along with Lactic acid bacteria was added to the coffee in the fermenters and allowed to ferment for 72 hours in a carbon dioxide rich environment. A different approach to roasting is what we adapted to this lot and is what we call extended maillard technique.
