While Benjamin Jenkin is the founder and driving force behind Cahoots, he’s quick to emphasize that neither the company nor its coffees are about him. His focus is on elevating Ugandan coffees—and, by extension, the cherry farmers and staff who make Cahoots possible.\n\nLast year's inaugural harvest, which Benjamin often refers to as “the first pancake,” went extremely well but wasn’t without challenges. A surging C-Market drove cherry prices to record highs in Uganda, creating two major hurdles: increased capital requirements and inconsistent quality delivered. These challenges exist even in “normal” years, but skyrocketing cherry prices intensified them.\n\nOther obstacles included limited drying space and unpredictable weather—common struggles for coffee producers everywhere. Instead of accepting these setbacks, Benjamin and his team hustled, transporting coffee between drying sites while maintaining a relentless focus on quality. \nThe result: remarkably well-processed, well-dried coffee that is both exceptionally clean and delicious.\n\nPranoy refers to this processing method as “Culture Washed.” The process for this lot actually began before the cherries were even picked, with the creation of a starter culture. By submerging coffee cherries in water, a fermentation starter was cultivated— much like a sourdough starter—resulting in a highly active collection of native bacteria and yeasts. Once the starter was ready, the cherries were removed, leaving only the liquid. After fresh cherry was pulped, this starter liquid was added to the fermentation tank, allowing the concentrated microbes to begin working more quickly than in a standard fermentation.\n\nAfter roughly 18 hours, the cherries were washed in grading channels, placed on drip tables, and then dried in a parabolic (solar) dryer for about three weeks.\n\nSL28 is among the most well-known and well-regarded varieties of Africa. It has consequently spread from Kenya, where it was originally selected in the 1930s, to other parts of Africa (it is important in Arabica-growing regions of Uganda, in particular) and now to Latin America. The variety is suited for medium to high altitudes and shows resistance to drought, but is susceptible to the major diseases of coffee. SL28 is notable for its rusticity—a quality meaning that it can be left untended for years or even decades at a time, and then return to successful production. Rwenzori is grown at elevations between 1,500 and 2,000 meters in the Rwenzori region. Around 300 smallholder farmers contribute to this lot, cultivating SL14 and SL28 varieties.

After harvesting, the cherries are transported to Agri Evolve’s Nyabirongo station, where they undergo a meticulous washing process. The cherries are floated to remove defects, and only the densest, ripest ones proceed to pulping. The wet parchment is then fermented dry for 48 hours, reaching a pH of 3.9, followed by a 24-hour soak in clean water. After thorough washing, the parchment is sun-dried with constant turning until it reaches the desired moisture content. The dried beans are hulled, graded, and color-sorted before export.

The coffee-growing conditions in Rwenzori include nutrient-rich soils and a balanced climate of rain and sunshine, ideal for producing high-quality coffee. Agri Evolve ensures that each step of processing is carefully controlled, maintaining consistency. Kuosha Crisp Rwenzori is a result of this meticulous approach, offering a clean, crisp profile with well-defined acidity and complexity.

The coffee, available in both Natural and Washed, is known for its cleanliness, balance, good body, and fruity notes. In 2022, they established their own factory at Nyabirongo, equipped with wet and dry mill facilities. This allows them to oversee the entire production process, from the arrival of freshly harvested coffee from farmers to the grading, packing, and dispatch of finished green coffee beans to global markets. Their efforts are rooted in a deep commitment to sustainable practices and the well-being of the communities they serve.\n\nThe Varieties\nSL28 and SL14 are two prominent Arabica coffee varieties developed in Kenya by Scott Agricultural Laboratories (hence “SL”). These cultivars are renowned for their resilience and distinctive cup profiles, making them favorites among specialty coffee producers and aficionados.\nSL28, developed in the 1930s, is especially admired for its drought resistance and exceptional cup quality. It is genetically traced back to Bourbon and Ethiopian landrace varieties. SL28 typically produces beans with complex acidity, vibrant citrus and berry notes, and a silky body—hallmarks of high-elevation Kenyan coffees.\nSL14, selected around the same period, is more common in Uganda and other East African countries. It is appreciated for its resistance to diseases like coffee leaf rust and its adaptability to varying altitudes. While generally considered less complex than SL28, SL14 still offers a clean, sweet cup with subtle fruit and floral notes.\nTogether, SL28 and SL14 represent the backbone of many East African coffee farms. Farmers often grow them side by side to balance cup quality with agricultural resilience, ensuring both high yields and rich flavors. These varieties continue to influence breeding programs and shape the global perception of East African coffees\n\nThe Processing\nRipe, red coffee cherries are harvested daily during the harvest season and taken to Ibanda village where they are received by Agri Partner, Salastial Masereka. There, cherries are weighed, assessed for quality and the farmers are paid in cash. From here trucks carry the cherries to our coffee station at Nyabirongo where the cherries are floated and graded before being sun-dried on raised beds.
