Once overlooked for coffee quality, this region now stands out for its unique profiles, thanks to the dedication and innovation of producers like the Alvarado family. Led by John Alvarado and Katthya Fonseca, together with their children, the family works with passion, environmental responsibility, and a deep commitment to quality. Each generation contributes to improving processes, maintaining sustainable practices, and ensuring harmony with nature. The Coffee This washed process begins with the careful hand picking of only fully ripe cherries to ensure uniform quality. After depulping on the same day of harvest, the beans undergo a controlled lactic fermentation in their mucilage, guided by native microorganisms from the farm. This innovative method enhances aromatic complexity while preserving varietal character. Once the ideal pH is reached, the coffee is washed and slow dried on raised beds before moving to patios for a final drying stage, carefully extended to refine sweetness and balance. After 6–8 weeks of resting in parchment, the beans achieve full flavor development. The result is a clean cup with bright citrus notes, floral accents, and natural sweetness a true reflection of the Alvarado Fonseca family’s commitment to quality and innovation.
