This unique coffee comes from the Las Flores farm (Nariño, Colombia), where Joan Vergara and his brothers experiment with processing and rare varieties. The lot features the Chiroso variety – an elongated bean with high resistance and a complex flavor profile. Grown at an altitude of 2000m, the coffee is enriched by volcanic soils and a unique microclimate. Natural processing with shade drying slowed down the process, enhancing the sweetness and depth of flavor. Expect bright acidity, rich sweetness, and an elegant cup structure.
