This lot is a special processed Pink Bourbon from Finca El Jardin in Tolima, Colombia. This is one of the only farms on our offer list that we haven't personally visited, but we trust the work that our Importers do, The Coffee Quest. They have sourced this outstanding expression of Pink Bourbon from Jorge Elías Rojas, Producer of this lot. The Pink Bourbon cherries are harvested at ripe sweetness (you can really taste that in the cup), and then are depulped, and fermented in mucilage. It's then washed and dried on raised beds under shade until 11.5% moisture. This classic, yet modern processing eleveates the intensity of this coffee, giving us a bright citrus fruit forward cup, but still sweet and a touch of spice. This coffee was one of our favourite lots of the year, giving us a juicy, yet sweet cup that you could happily have every day. Get it now, for filter or espresso!
