Description
Black Moon Farm is run by Hunter Tedman and sits high in Alto Quiel, where volcanic soils, cool temperatures, and heavy rainfall shape an expressive Panamanian terroir. What was once a vegetable farm is now a regenerative coffee project, moving toward a biodiverse food forest where coffee grows under a living canopy. The goal is simple but ambitious: fix carbon, rebuild soil life, and let cup quality improve naturally year after year. This philosophy connects environmental health directly to flavor and consumer well being. Chiroso is a genetically pure Ethiopian Landrace that has gained attention for its striking aromatic profile. At Black Moon, this is only the second Chiroso harvest, yet the clarity and complexity already stand out. Cherries were harvested during February’s waxing moon, carefully selected, briefly fermented anaerobically, and slowly dried for 40 days in a dark drying room. The result is a vibrant and structured cup with juicy acidity, floral lift, and deep fruit sweetness, a true expression of place. Recommended freezing time: 14 days
