#### History Our new Crazy Christmas coffee is Los Pirineos Pink Bourbon from El Salvador! This is a washed Pink Bourbon varietal grown at 1400 meters above sea level by producer Diego Baraona in the region of Usulután. Pink Bourbon is already an eye-catching varietal, but this lot in particular stood out to us during selection for its delicacy and clarity. In the cup we taste floral aromatics, peach and stewed berries, carried by a clean and elegant structure. We are now in our fifth year buying from Los Pirineos, a farm recognised as a pioneer in processing innovation and in cultivating rare varietals. Diego has visited Prolog twice, and we had the chance to visit him and the farm for the first time in 2023. Since then, our relationship has only grown stronger.
