Inspired by the mellow coffee time spent in a kissaten, this blend offers an elegant and floral aroma, paired with a rich, jam-like sweetness. It’s the kind of coffee you’ll want to enjoy slowly, forgetting the rush of time. Cupping Comment: ① Gentle, gradually spreading flavors of grape and blackcurrant. ② A sweetness reminiscent of biting into cranberries and blueberries together. ③ A velvety texture of raw honey, the sweetness of maple syrup, and a lingering aroma of toasted walnuts. From the Blender: In classic Japanese kissaten (coffeehouses), it was common to serve blends with a restrained, well-balanced flavor profile. For this blend, I aimed to carry on the nostalgic charm unique to kissaten while beautifully overturning the traditional image through flavor. By using two different roast profiles of Ethiopian beans—known for their floral aroma—I created a cup that reveals layers of berry-like flavors. At LiLo Coffee Kissa, this coffee serves as the base for espresso drinks. With that in mind, I carefully adjusted the blend so that its delicate berry sweetness still shines through when paired with milk.
