Cup profile: peach, vanilla, wild strawberry, pineapple, bergamot Key facts: Agaro, Jimma Zone, Western Ethiopia Variety: Heirloom washed, 1950-2200 m About the coffee: This year seems to be a really great coffee year, especially in Ethiopia (if you only knew what else is waiting in our warehouse!). This lot comes from the village of Chelbesa (located in the Gedeb district in the Gedeo zone, from where we already know one or two highlights ;)), where SNAP operates a washing station at over 2000 m above sea level. 650 small farmers from the region bring their cherries here, where they are processed either washed or natural. In our case, the method of choice is washed: After the cherries, which grow in semi-forest under trees, are brought to the station, they are fermented for 45 to 60 hours (again in the shade). They are then washed in tiled tanks - to completely remove the mucilage - and dried on drying beds for 7-10 days.
