Cup profile: peach, black tea, lemon curd, bergamot, goji berry Key facts: Arbegona Wereda, Sidama region Variety: 74110, 74112 & 7454 washed, 2000-2100 m About the coffee: There are usually two reasons why the colleagues in the roastery have finished all the test roasts. Firstly, Felix has worked his magic again when creating the profile and secondly, the new harvest from Ethiopia has finally arrived! The Bochesa Washing Station, established in 2022, is located in the Arbegona district in the Sidama region of Ethiopia. The employees and their helpers process 500 to 600 tons of coffee cherries every year, which are brought to the station by 823 farmers from the surrounding area. About the processing: First, the cherries are pre-sorted, washed and depulped (separated from the skin and pulp). The beans then ferment for 12-16 hours in water tanks under controlled conditions before being washed a second time. They are then left to dry on raised beds for around 10-14 days (depending on the weather), where they are turned regularly and covered with nets during the midday and overnight. As soon as the final moisture content is reached, the parchments are packed and prepared for shipment.
