By our count, that's a win-win-win-win!\nWe sourced this coffee from a farm our roaster visited four years ago with help from our friends at Ally Coffee.\nCoffee producer Petrônio Otávio Borges de Sousa operates Fazenda Santa Rosa in Cambuquira, Minas Gerais in the Sul de Minas region of Brazil. Petrônio was born to a coffee producing family, with history stretching back to his grandfather who set the standard of the family’s devotion to agriculture. Today, Fazenda Santa Rosa—which totals 636 hectares of land and includes 290 hectares of coffee production—is just one of the family’s farms in the Sul de Minas region. After a survey this year, it was also declared to be carbon neutral in all its operations! Quite an accreditation for a country in which mechanized picking is de rigueur. \nPetrônio’s main motivation is to produce specialty coffees, aiming to produce high quality lots with a commitment to the hard work and innovation needed to accomplish his goal. That motivation is supported by the social ties that connect Petrônio and his family to the broader coffee industry. As he explains, “[relationships] created within the coffee market, whether with friends in Brazil and customers and partners abroad, also motivate us more and more to increase our commitment and performance in the sector.”\nThis lot of Yellow Bourbon coffee underwent Natural processing. Yellow Bourbon was discovered in 1930 on a Red Bourbon farm in Pederneiras, São Paulo, Brazil. It’s unclear if Yellow Bourbon developed as a natural mutation of Red Bourbon, or if it was a naturally occurring cross between Red Bourbon and Yellow Botucatu, a mutation of Typica discovered in 1871 in Botucatu, São Paulo. Yellow Bourbon is known for good cup quality and relatively high productivity, and has come back into fashion as a cultivated variety across Brazil after its initial novelty wore off in the mid 1900’s. We are delighted to present the first of two Christmas offerings this year, this one being the big crowd-pleaser, a coffee the whole family can enjoy, a Cozy Christmas!

This Yellow Catuai Honey lot comes from 1800 meters above sea level and offers an elegant, clean profile with notes of red fruit, brown sugar and nutty sweetness.

This is now our fifth year of working in partnership with the small collection of farmers that contribute to the Roble Negro Wet Mill in Costa Rica and we couldn't be happier with the results of our collaboration so far!

We’re now had the great opportunity to visit the Roble Negro wet mill on three separate occasions and even have some members of the team visit us here in Copenhagen in summer last year for World of Coffee. From this, we can clearly see that Jorge’s Roble Negro wet mill is one which has high quality standards and thoughtful sustainability practices.

The farm is filled with natural springs and freshwater sources, which the forested areas help protect and keep clean, and is situated at the transition between the Pacific side of the country and the Central Valley, spanning from 1750 to 2000 meters above sea level.

History

We have been working with Jorge Vasquez since 2020. His farm is just outside San José, in the highlands of Aserrí in Costa Rica’s Tarrazú region, lies Finca Cedral Alto, meaning ’high cedar grove’. Together with the Roble Negro mill, this 22.5-hectare landscape is shaped by primary forests, thoughtful reforestation, and crystal-clear natural springs. Set between the Pacific and the Central Valley at elevations of 1750–2000 meters, it provides an idyllic environment for cultivating exceptional coffee. In the cup, expect an elegant balance of crisp apple, warm brown sugar sweetness, and a soft, nutty finish.
