Named for the graceful and elegant gazelle, Swara -Swahili for gazelle - will put a spring in your step. Thoughsmall, gazelles are capable of outrunning a cheetah. Like the gazelle, this quintessentially Kenyan coffee packs an impressive punch. This coffee is composed primarily of SL28, SL32 and Ruiru11 from small estates and cooperatives throughout Western and Central Kenya. The Coffee Farmers handpick only the ripest cherries and deliver them to nearby washing stations or process them on their own farms. After sorting out underripe and overripe cherries, the ripe red ones are pulped using disk or drum pulpers, then fermented and washed in clean water to remove any remaining mucilage. The wet parchment is hand sorted to remove defects before being dried on raised beds for about two weeks. During drying, the coffee is regularly turned, covered during the hottest hours and at night, and carefully monitored to ensure even drying and protect quality. Once fully dried, the parchment is sent to Kahawa Bora Millers, where it is milled in small, traceable lots to maintain exceptional quality and transparency.
