Description
The Cerro Azul farm is one of the flagship projects of Café Granja La Esperanza. The farm focuses exclusively on cultivating the Geisha variety. Cerro Azul was one of the first farms in Colombia to introduce Geisha, using seeds brought by the Herrera family from Panama, with the goal of elevating Colombian specialty coffee to a new level. The project combines ideal enviromental conditions, cool temperatures, abundant humidity, slow cherry maturation, and fertile soils with meticulous agricultural practices. Every step of production is highly controlled. Cerro Azul represents Café Granja La Esperanza’s commitment to innovation, sustainability, and excellence. The handpicked coffee cherries are selected at peak ripeness, ensuring that only the finest beans pass through a meticulous selection process. After a flotation step in water to remove any low density or defective cherries, the remaining fruit undergoes a unique multi stage fermentation designed to highlight vibrant and complex flavors. The journey begins with a 14 hour natural fermentation in open tanks, followed by an 18 hour closed tank fermentation that deepens and enriches the profile. After pulping, the coffee enters a final 72 hour aerobic fermentation, resulting in an exceptionally refined and expressive cup. To preserve the intense flavors developed during fermentation, the beans are gently dried in mechanical dryers for 3 to 5 days at a controlled temperature of 38°C.
