Description
This exceptional coffee comes from the heights of Haraz, in the Wadi Al-Sharif valley in Yemen, at an altitude of 2,450 meters. From the ancient Mocha variety and harvested in February 2025, it is produced by Saleh Ghaleb Al-Harazi, a discreet but brilliant pioneer of the new wave of Yemeni coffee. His expertise, nourished by ancient traditions and a unique experimental approach, makes him one of the few producers in the world capable of mastering the Hydra Reviva Process, an exclusive process combining initial slow drying, controlled rehydration, anaerobic fermentation in barrels, and precise final drying. After an initial 16-day drying in the shade on raised beds, the beans are gently rehydrated in a semi-closed chamber with misting, to reactivate their internal enzymes. It then ferments for seven days in airtight barrels at a stable temperature, before returning for an additional 16 days on raised beds with meticulous handling every five hours to perfect stabilization. In the cup, we find notes of dates, orange zest, and tamarind. A rare, smooth, and deeply expressive coffee, enhanced by a complex process.
