**Finca La Riviera [Sudan Rume]** From the La Riviera farm, this Sudan Rume is grown at an altitude of 1,750 meters in Santa Rosa de Cabal, in the Risaralda region of Colombia. A rare and expressive variety, Sudan Rume is recognized for its exceptional aromatic potential and natural complexity. This lot is processed using a bioreactor method, aiming to intensify and enhance the sensory profile of the variety. After depulping, the coffee is fermented in a bioreactor with an inoculation of selected indigenous yeasts (Kazachstania humilis), sourced directly from the farm. Fermentation is rigorously controlled for approximately 48 hours, with precise monitoring of temperature and acidity. Once fermentation is complete, the coffee is washed and then sun-dried until it reaches 40% moisture. It is then transferred to a dark room equipped with a dehumidifier to slowly reach a final moisture content of 11%, ensuring stability and precision. This controlled process yields a bright and elegant coffee, revealing notes of apricot, citrus, peach, and rose, supported by a silky texture and a beautiful sweetness. This coffee was transported to Europe aboard a 100% sail-powered cargo ship, reducing CO₂ emissions from maritime transport by up to 98%. A direct route, with no transshipment, for a cleaner and better-preserved coffee.
