Description
Finca El Destino is an exceptional farm located in the Boquete region of Panama, in the heart of the lush Chiriquí mountains. Founded by Benito Bermudez and Mario Castrellón, two iconic figures in the Panamanian gastronomic and coffee scene, the farm has made it its mission to produce exceptional coffees through a modern, sustainable, and innovation-driven approach. For this lot, the cherries are processed using Cool Water Fermentation, a unique technique where they ferment anaerobically under cold water from a mountain spring located on the farm. This low-temperature fermentation develops an aromatic profile guided by the Horqueta terroir: floral, delicate, and juicy with fruity notes. In the cup, it reveals notes of blueberry, raspberry, lavender, and mirabelle plum. A delicate and remarkably balanced profile. Today, Finca El Destino is one of the new Panamanian farms that are shaking up the codes of specialty coffee. Its sought-after and award-winning lots perfectly reflect the ambition of its founders: to produce rare, refined coffees deeply marked by their terroir.
