Description
From the Gedeb region, in southern Ethiopia, this coffee is produced by a community of small farmers whose cherries are carefully collected and processed at the Banko Gotiti station, renowned for the quality of its micro-lots. This lot benefited from carbonic maceration, a technique inspired by the world of wine: whole cherries ferment in a CO₂-saturated tank, which triggers a slow and controlled fermentation inside the fruit itself. This process intensifies the aromas and brings great complexity to the cup. The result is a fruity, fermented and expressive coffee, carried by notes of black cherry, tropical fruits and a vibrant touch of bergamot. A perfect lot for lovers of experimental coffees.
