Description
Gedeb, Ethiopia – Natural Ethiopian Heirlooms *– “An exceptional showcase of local heirlooms, meticulously selected and naturally processed in the village of Halo Barite, nestled in the highlands of Ethiopia’s Gedeo Zone”.* This lot comes from smallholder farmers in the village of Halo Barite, located in the high-altitude Gedeb region of southern Ethiopia. Known for its exceptional terroir, Gedeb consistently produces some of Ethiopia’s most expressive and fruit-forward coffees. Cherries are handpicked at peak ripeness and delivered to the Halo Barite drying station, where they undergo a classic natural process. The whole cherries are carefully sorted, then dried slowly on raised African beds. Controlled airflow and regular turning ensure even drying while preserving the fruit intensity and clarity that define the region’s best naturals. To help communicate the sensory identity of our Ethiopian releases, our team created an internal flavour wheel in which each profile is represented by a colour. This coffee falls under the “Diima” profile — Diima means “red” in the Oromiffa language. Coffees in this category are characterised by vivid intensity, fruit-candy sweetness, violet florals, and stone fruit notes. Diima Halo captures the best of Halo Barite’s natural lots: bright, juicy, and aromatic, with layered sweetness and a distinctly character.
