Here, coffee is more than a crop — it is a way of life, passed down through generations of farming families. Harvesting Method Manual selection of ripe cherries to ensure only the best fruit is processed. Fermentation Process 48 hours of controlled oxidation after pulping, enhancing the complexity and clarity in the cup. Drying Method Full solar drying on raised beds until reaching 11% moisture content, preserving the coffee’s integrity and structure. Story Catalina and Pierre of Cata export have worked with the Timaná community for a few years. It all began with a shared vision: to honor their heritage while opening new opportunities for their exceptional coffees in global markets. Through Cata Export, we work hand-in-hand with local producers, supporting them with training, quality control, and access to fair, sustainable trade.
