Manos Juntas is a micromill in Sotara area of Colombia's Cauca region, operated and managed by the Colombian based exporter, Banexport. The entire concept of this micromill is based on simplifying tasks and responsibilities, for both producers and Banexport. Believing that crop production and post-harvest processing contribute equally to the final quality of a coffee, the Manos Juntas micromill has established clear tasks and responsibilities, for both farmer and mill. The producers that deliver their cherry to Manos Juntas are able to focus on fertilization, pruning, and proper harvest of cherries. Whereas the management team at the mill can focus on fermentation, pulping, drying, and storage. This symbiotic relationship allows each party to focus on the factors they're best positioned to influence. Processed as an anaerobic natural, this lot was fermented in sealed tanks and flushed with nitrogen gas to stimulate microbial activity. During fermentation, the Brix (sugar content) and pH levels are constantly monitored, to ensure consistent and repeatable results. The coffee is then dried on raised beds for 30-45 days, creating a fruit forward coffee, with a very dense, syrupy mouthfeel.
