Description
Sourced from the Nasa Wesx indigenous community, this coffee comes from Gaitania in southern Tolima, Colombia. The village lies in the foothills of the Northern Andes, shaped by the nearby Huila volcano. <br/> <br/> Coffee here is grown under a natural canopy of shade trees, benefiting from steady temperatures, rich volcanic soils, and knowledge passed down through generations of the community.<br/> <br/> The cup carries notes of pineapple juice and sweet grenadine, a direct expression of the farm and the community that produced it. The region has a long history of smallholder farming, where coffee is not just a crop but a part of local life and culture. <br/> <br/> This lot is certified organic, reflecting care for both the environment and the traditions that sustain it.<br/> <br/> The cherries were processed using an anaerobic natural method, with around 40 hours of fermentation in oxygen-free conditions. <br/> <br/> This approach allows the coffee to develop complex fruit flavours.
