Variety: Caturra Process: Sugar Cane Region: Tolima Farm: El Vergel Altitude: 1450 meters above sea level Tasting notes: almond, panela, caramel Producer information: In 1995, the Bayter family launched a full-fledged agricultural project on their El Vergel farm. Avocados were their main crop, but when prices plummeted in 2006, they knew it was time to revolutionize the business. So they incorporated a few coffee varieties: catimor, red caturra, and yellow caturra. In 2016, with the help of coffee guru Miguel Jiménez, they planted specialty coffee varieties, laying the groundwork for true coffee greatness. In 2018, they embraced the natural processes of coffee, experimenting with fermentation control.
