Grown between 1993 and 2150 meters above sea level, local farmers cultivate indigenous heirloom varieties and process their cherries with meticulous attention. The soil and environment support high-altitude production, which contributes to slower cherry maturation and more developed flavour complexity.</p> <p>This coffee was processed as a natural, dried on raised beds with careful sorting. Coffees from Shantawene are celebrated for their bright yet refined acidity, smooth mouthfeel, and expressive aromas featuring vibrant berry and floral notes. This region produces specialty Ethiopian coffees that showcase clarity, character, and the unique nuances of their terroir.</p> <p><strong>FLAVOUR NOTES</strong></p> <p>The word "Diima" means "red" in the Oromiffa language, and indicates the flavour profile of this coffee expresses itself through red and purple notes. We find <strong>blackcurrant</strong>, with a <strong>honey</strong> sweetness, and elegant <strong>violet florals</strong> as the coffee cools.</p>
