Region: Pitalito, Huila, Colombia Producer: Luis Marcelino, Aroma Nativo Varietal: Bourbon Aji Altitude: 1700-1750 masl Process: Hydro Honey Harvest Date: 08/07/2025 Aroma Nativo: 'For this outstanding lot, only the ripest Aji cherries were picked, ensuring the highest quality. These cherries underwent an intricate fermentation process in a carefully controlled anaerobic environment, followed by pulping. They were then dried for few days to achieve the optimal moisture content before being returned to fermentation tanks for a rehydration with selected yeast and bacteria. Finally, after this meticulous process, the coffee is sent back to the drying raised beds. Sun-dried on raised beds, followed by a 2.5 month stabilisation phase, in a meticulously temperature controlled environment. A beautifully crisp and sweet filter, offering up rich strawberry, apricot and clementine.
