This very special microlot was grown on a small 4.5-hectare farm, run by Darwin Estuardo Fabián Estrada. Darwin is a fifth-generation coffee producer; his family has farmed coffee since 1899, and El Calagual itself was a name first chosen by his father, Bonifacio, after the abundant native *calaguala* ferns. For many years, Bonifacio sold his coffee cherries as a cash crop on the local market which meant that all traceability of their coffee was lost. However, while studying agronomy at university, Darwin realised that the family farm’s high elevation and unique microclimate were ideal for producing high quality, specialty coffee. It took some convincing, but eventually Bonifacio let his son process some of their coffee as part of his university thesis – and since then, Darwin has carefully produced memorable, sweet lots, like this one, which are a labour of both love and knowledge. As Darwin told us, “We do all of this with a lot of love…It’s a work we enjoy doing and it makes us happy to be able to do it well!” We are so excited to be sharing this beautiful filter coffee as a limited release – in the cup, look for notes of strawberry jam, honeydew melon, and cocoa.
