Guatemala El Paraiso
Tasting Notes
Description
Sweet and creamy coffee from the Farm series for filter coffee, from Urisar Ferneldy. His coffee quickly gained popularity for its sweet flavor and elegant acidity. A great coffee for everyday drinking. Urisar Ferneldy is a young and enthusiastic farmer, whose dedication to specialty coffee was noticed by San Miguel Coffees. We discovered his coffee in 2022, noting its complexity and elegant fruitiness typical of the Huehuetenango region. We now regularly visit his farm in Guatemala to observe his expanding production and experiments. **Farm Coffee Series** This series represents the core of our offering: seasonal specialty coffee lots from producers with whom doubleshot has long-term relationships, prioritizing respect for nature, people, and coffee. **How does this coffee taste?** Our cupping notes reveal **stone fruit, milk chocolate, honey, a thick body, and subtle malic acidity.** **El Paraiso Farm** Founded by Urisar's grandfather in 1965, coffee became the main crop. Urisar, who studied agronomy, took over in 2010, transitioning to systematic farm care. The 16 ha farm is on a steep hill at 1800 - 2050 meters above sea level. Besides Bourbon, Typica, and Caturra, he is planting SL 28, Geisha, Pacamara, and Moka. His processing facility includes two fermentation tanks and 60 drying beds. **The power of Instagram** Follow Urisar's passion on [Paraiso Coffees](https://www.instagram.com/paraisocoffees/). This platform helped him connect with San Miguel Coffees and roasters. **Vision** Urisar is dedicated to improving his and his neighbors' coffee cultivation and processing, aiming to build a larger facility for quality control and roasting. **Washed process** Harvested cherries are washed to select ripe ones, then de-pulped. Coffee seeds are fermented for 36-48 hours, removing the protective layer, and then washed in water canals. Clean beans are dried on African beds for 10 days. Urisar also experiments with honey and dried processes. **San Miguel Coffees** In 2022, due to drought, we sought new partnerships and connected with Adrian Cabrera of San Miguel Coffees. Urisar's coffee stood out during our visit, making San Miguel a regular stop.
