I met Wilder Lasso back when he was my veterinarian. He said I was too stressed and prescribed a lavender treatment. He spoke of a gem, a Gesha, seemingly shy at first, but hitting you with a note of lemongrass, followed by hints of lavender and mango. No time to laze around, I moved to the Bella Alejandría farm, located at 1890 meters above sea level in the Huila region of Colombia. Currently a coffee producer, Wilder entered the world of coffee in a unique way and used his knowledge in genetics and energy to start a program in Tocora, now including more than 12 distinct varieties carefully selected from different origins. This is a double fermentation lot, with 200 hours of submerged anaerobic fermentation in mucilage, helping develop a remarkable floral and citrus profile. Subsequently, the beans are exposed to the sun for 18 days and stabilized in Lasso's Tocora warehouse for 25 days before being ground. Geisha or Gesha?
