The annual release that’s closest to our hearts. Bluebird Coffee Roastery Founder, Dario Scilipoti and 5th generation coffee farmer and owner of Volcan Azul, Alejo Castro share a common belief that they are building something for future generations. Something that lasts beyond their own lifetimes and something to take care of the people they love for generations to come. From sustainable energy, regenerative farming, people-focused business practices, investing in relationships and often, making hard decisions that curb short term gain in favour of longevity and sustainability. Playing the infinite game, so to speak. This is a personal project, with a personal story, but it is equally as fundamental to Volcan Azul and Bluebird Coffee Roastery as businesses. Our business practices are founded in who we are as people. This philosophy is the guiding light for our everyday work and is woven into every decision that we make. This particular release is our reminder to ourselves for the reason we are here. As we navigate the early years with our own Next Gen, we’ve picked a design inspired by their fun and colourful little worlds. You’re in for a treat. Alejo and his team grew this geisha at 1700 masl on their farm in the West Valley of Costa Rica. We were privileged to visit the farm in 2023 and taste these geisha cherries off the tree before they were harvested and processed. It was processed as an anaerobic natural at Volcan Azul’s world-class processing facility and dry mill. The coffee was fermented in a carbon dioxide rich environment with the cherry still intact. Volcan Azul is renowned for their anaerobic processing that preserves the integrity of the naturally occuring flavours of the coffee while elevating them to be bold and unique at the same time. When it arrived at Bluebird Coffee Roastery, it was sample roasted on our Ikawa 100X before moving onto our Stronghold S7X roaster. This roaster roasts 850 grams at a time and makes use of convective, radiant, and conductive heat applications. The first and only of its kind. This roaster is what we use to roast all of our rare, exclusive and competition coffees. This is the coffee you have in front of you. The end result is a coffee that tastes of candy canes, grape bubblegum, cherry slushies. It feels like a day at the fun fair.
