This selection, Echo, reflects Finca Deborah’s experimental approach. By incorporating dried cascara during fermentation, it offers a more layered and complex expression of flavor. ## why we select Finca Deborah is located at an elevation of 1,900 meters in the Volcán region of Panama and is regarded as one of the world’s leading producers of exceptional Geisha coffees. The farm’s owner, Jamison Savage, is well known for pioneering the use of carbonic maceration fermentation—a technique borrowed from winemaking—within coffee processing, opening a new chapter in specialty coffee fermentation. The Echo lot we are introducing this time is a result of Finca Deborah’s experimental processing approach. During fermentation, dried cascara (coffee cherry pulp) is added, creating a cup with greater aromatic complexity and depth. Enjoy pleasant flavors reminiscent of berries and grapes, alongside the distinctive, vibrant floral aromatics characteristic of the Geisha variety. ## aery’s comment Aery appreciates the diverse flavors that coffee can express. To allow those flavors to feel clean and vibrant, we roast our coffees lightly, focusing on clarity rather than intensity. Since coffee needs time to reach its optimal brewing state, we recommend brewing about 10 days after the roast date for the best experience. For brewing, we use a ratio of 1:16.3 (coffee to water) to achieve a cup that feels balanced and expressive without being too strong.
