For over a century, four generations have been dedicated to coffee farming, making them one of Panama’s most renowned coffee-producing families. Elida Estate, one of the four farms they operate, has earned multiple awards at the Best of Panama and is celebrated as one of the finest producers of Geisha coffee in the world. The Washed Geisha from the Torre lot introduced here is a coffee made from cherries harvested at the Torre lot, located at a high altitude of 1,850 meters. After harvesting, the cherries are depulped, washed, and then naturally dried. What we found particularly interesting during tasting was the processing timing. While it is common to pulp cherries harvested in the morning and begin drying them shortly afterward, the Torre lot carries out pulping at 6 p.m., with drying starting thereafter. This approach gives the coffee a more dimensional structure, while allowing the Torre lot’s signature, perfume-like jasmine character to be expressed in its purest form. *** **Aery’s comment** As professionals, we carefully curate our lineup with only the highest-quality coffees - those with rare and exceptional green beans and remarkably clear flavor profiles that specialty coffee lovers can truly trust and enjoy. For brewing, we use a ratio of 1:17–18 (coffee to water) to achieve a cup that feels balanced and expressive without being too strong.
