The same care they apply to their washed and anaerobic lots is present here in the dried cherry husk. The result is a cascara that is bright, structured, and far cleaner than what is typically found in the category. Expect a layered sweetness with notes of raisin, orange, hibiscus, and dried berries, carried by a clarity that reflects the high altitude and slow drying conditions of the region.
